A few weeks ago I picked up Vegan With A Vengeance by Isa Chandra Moskowitz. It's a cookbook with over 150 'cheap, animal free recipes that rock'. I have to agree.
So far I've made the scrambled tofu many times. I have to say, I had never even looked at tofu in the grocery store before. I had no idea what it looked like. Cub has organic tofu, 2 packs (2 1 pound packs) for $3.00. It's been at this price the last two times I've picked it up. Cheap.
I like it scrambled with mushrooms, onions, zucchini and spinach. I add in cumin, paprika and pepper. It takes on the flavor of the spices and it of a scrambled egg consistency. Lots of protein.
I've also tried the mushroom risotto. Yum. Lots and lots of mushrooms, rice, sun dried tomato, vegetable broth. It's wonderful. I stuffed it into red peppers. My family wouldn't taste it so I ate it for the next 4 meals! They don't like mushrooms at all. I'm willing to bet they wouldn't eat it without the mushrooms..we'll see next time!
Everyone liked the banana pecan pancakes. What's not to like there? There are many recipes I have highlighted that I am going to try. I'm trying a few each week. This week I will be trying the asparagus and sun dried tomato frittata, sweet potato crepes and green garlic pizza. Great variety!
I haven't touched Splenda in 14 days. This is the first time I've ever gone without splenda since it was first invented. I haven't had a Diet Pepsi or Diet Coke, I haven't added Splenda to my coffee (yes, I'm still drinking my coffee each morning), nor have I added my normal skim milk. I haven't had dairy/meat in 2 weeks. I don't miss it. I feel energized. Is that crazy or what? I don't know how long it will be until the meat craving hits, who knows. For now, it's just not there. I imagine I'll eat it when I feel it. I'm not feeling it.
My workouts are absolutely rocking. Today was track day. I was anxious to get out there and see how fast I could go. I decided not to wait for the boys tomorrow. I was energized and feeling fast during my 5 miles this morning with Topaz so couldn't wait to hit the track.
I was fast! Well, Julie fast anyway. I ran 10x800 hitting 315 (I've never hit 315!) to 325. Amazing. I can't even believe it. This is the first time I've actually run track workouts and tempo runs each week for 6 weeks. First time ever. It's paying off. But then of course I have to wonder if it even matters in the big picture of running long distance. I don't know. It can't hurt and it makes me feel good!
My lifting is going great as well. I've cut down from 5x a week to 3x a week..and yes, this is probably part of the reason I feel so energized and such. I am increasing poundage as I usually do. I imagine the increases will drop off and I'll maintain. I'm fine with that.
Last week I ran my 4th consecutive hill workout at Hyland and that was strong as well. I didn't know if hills, track, tempo and distance would tire me out but it hasn't, so far. It's early yet. I didn't feel absolutely dead tired after the workout. I'm up to 5 hours of hill running now. I'll get in one last session this week and then wait until after Lean Horse, working more hills for Javelina 100 in October.
I'm looking forward to Lean Horse 100 in a few weeks. After this weekend's final long run I'll cut back and taper. So I say.
