


Troy and I were pretty excited when Tyler asked if we wanted to join him and his friends at the Quarry Park in St. Cloud today. It is 95F, we love water, YES!
I couldn't believe that he and his friends would want his mother and younger brother along for the fun. They are the nicest friends. "We like you Julie and Troy; you talk to us! You are cool". Alrighty then. We are IN!
We left this morning and I wasn't sure what to expect. The Quarry Park is out of St Cloud a few miles, park the car and get out and walk about 1/2 mile. We lugged out floaties from the pool, beach towels and cooler of water and Diet Coke.
What a blast! We had a group of 15. Jumping off of the cliffs, floating around, just having a blast. I even jumped off of the cliffs!
Next up: Troy's baseball tournament tonight. Hot nice night for a baseball game :)

ReplyDeleteThis looks like fun but totally off the subject. I just made the coconut cake you had posted a long time ago. I made the frosting twice, it tasted great but both times it was fairly thin. Did I miss something in the recipe? What do you think?
Hey Angela, I'll dig out my notes and see about the frosting. If i recall, it was real thin. I'll let you know what I see.
ReplyDeleteAlright Angela, it was the Honey Ginger that had the thin frosting. Now I looked at my notes for the Coconut cake and I had no problem with a thin frosting. I used it, in fact, for my Easter cake and noted that it was a nice alternative to the bun bun cake I normally make. I didn't say anything about thinness so I wonder if your cream cheese and butter were cold enough? If warmer they could have become thin instead of thick when you add the sugar? Just a thought. Was it a warm day? Today I'm making Oreo brownies for a potluck tomorrow.

ReplyDeleteI looked at this recipe for the frosting on another blog. It turns out the sugar in your version says 2 teaspoons and the other version is 1 cup. I think this is the problem. I am just glad to figure it out because the frosting tastes great. I would like to keep using it.
